Mango Salsa Dip & Aubergine Salsa Dip

Ingredients for aubergine salsa:

  • 2 cups aubergine/eggplant (Roasted)

  • 1 tsp olive oil (+1 tsp extra)

  • 1/2 cup green bell pepper

  • 1/2 cup onion

  • 1/2 cup tomato

  • 2-3 garlic cloves

  • 2-3 green chillies

  • 3 tbsp yoghurt

  • salt to taste

  • 2 tbsp lemon juice

  • Some fresh coriander


Method:


  1. Preheat the oven to 180° C.

  2. In a baking tray add the aubergine and sprinkle with 1 tbsp of oil.

  3. Roast in the oven for 10 minutes and let it cool down.

  4. In a large bowl add roasted aubergine, bell pepper, onion, tomato, green chillies, coriander, salt, yoghurt and purée with the hand blender.

  5. Then add 1 tbsp olive oil and lemon juice,  Mix well.


Ingredients for mango salsa:


  • 1 1/2 cups mango

  • 1 olive oil

  • 1/2 cup green bell pepper

  • 1/2 cup onion

  • 2-3 green chillies

  • 1 tsp chilli powder

  • Salt to taste

  • 2 tbsp lemon juice

  • Some fresh coriander


Method:


  1. In a large bowl add mango, bell pepper, green chilli, onion, coriander, chilli powder, salt and purée with the hand blender.

  2. Then add olive oil and lemon juice,  Mix well.


Note: You can use any colour bell pepper and also you can add or remove garlic and onion.
